Halloween "Thriller" Menu
Hair Balls and Guts Salad with Drool Dressing
Serves 6 and a black cat
2 avocados
2 cups sprouts, clover or alfalfa and or microgreens
4 medium beets, boiled and peeled
Mash avocados and stir in sprouts. Form into balls and place on serving dish or individual plates.
Chop beets in an unattractive manner. Arrange around sprout and avocado (hair) balls.
Drizzle with Drool Dressing (recipe follows).
Drool Dressing
½ cup fresh parsley, loosely packed
½ cup chopped green onions
½ cup white balsamic vinegar
1 ½ cups olive oil
1 ½ tsp. sea salt
¼ tsp. black pepper
3 Tbsp. flax seeds
Puree parsley, green onion and vinegar in blender. With blender on low speed, gradually add oil, salt, pepper and flax seeds.
