A Treat Called Beets

3 medium beets
2 Tbsp. sunflower or safflower oil
2 tsp. fresh lemon juice
1 tsp. salt
1 oz. (sm. bunch) fresh dill
½ avocado, cut in ½ inch cubes
3 Tbsp. pumpkin seeds, toasted

Scrub beets well (nail brush works well). Do not peel, and leave one inch of root attached.

Place beets in saucepan and cover with cold water. Bring to boil and then turn low and simmer for 35 minutes.

Drain beets and plunge into or rinse with cold water. Peel when cool. Cut beets into ½ inch cubes and place into bowl.

Toss with lemon juice, salt and fresh dill.

Place in serving dish and top with avocado and toasted pumpkin seeds.

Snack on this regularly!

Variation: Try fresh mint or tarragon instead of dill.
