Perky Plum Cake

1 cup rolled oats
1 cup unbleached or whole wheat pastry flour
1 tsp. baking powder
1/4 tsp. sea salt
2/3 cup vegan margarine
1/2 cup maple syrup
1 tsp. lemon zest

2 cups sliced plums
2 Tbsp. vegan margarine
1/4 cup unbleached or whole wheat pastry flour
1 tsp. cinnamon
1/4 tsp. sea salt

Pre-heat oven to 350.

Mix together oats, flour, baking powder and sea salt in a bowl.

Melt vegan margarine and add to flour mixture with maple syrup and lemon zest.

Toss sliced plums with remaining four ingredients (vegan margarine, flour, cinnamon and sea salt).

Place 2/3 of the flour mixture in the bottom of an 8x8 baking dish and arrange plums nicely on top.

Sprinkle the rest of the flour mixture over the top of the plums.

Bake for 35 - 45 minutes.
