Native Stroganoff---One Pot Meals

Native Stroganoff

Serves 6

 

 

¼ cup                   olive or sunflower oil

1 ½ lbs.       seitan

6                 shallots, peeled and sliced

2 cup          sliced mushrooms

3 Tbsp.       unbleached flour

3 cups         soymilk

½ cup                   white wine

1 Tbsp.       Dijon mustard

½ tsp.                   black pepper

¼ tsp.                   white pepper

1 lb.            cooked linguine or fettuccine pasta

¼  cup         chopped fresh Italian parsley

 

 

1.     Heat oil in saucepan and sauté seian and shallots until shallots are transparent and lightly browned.

2.     Add mushrooms for 1 minute, then sprinkle flour and sauté another minute.

3.     Mix in soymilk, wine, mustard, salt, black and white pepper, and simmer until thickened.

4.     Portion pasta on plates and top with Native Stroganoff.

5.     Garnish with chopped parsley.
