Smashing Squash

(Serves 4-6)

This is a good simple recipe and a fun way to get to know flavors of the different squash by making it with different types of squash each time.

1 medium butternut squash or squash of choice
1 orange or tangerine, rind zested and juiced
2 Tbsp maple syrup
1 Tbsp Earth Balance (vegan butter)
¼ tsp sea salt
¼ tsp cinnamon
Pinch cloves
1 cup toasted pecans

Bake squash in a 400º oven until soft inside. Let cool until you can handle. Cut in half, remove seeds and scoop out flesh into a bowl.

Add other ingredients and mash well or mix with hand mixer. Garnish with toasted pecans.
