Jamaican Jerk Stew One Pot Meals
Jamaican Jerk Stew
Serves 6-8
2 Tbsp. olive oil
1 ea onion
3 cloves garlic, sliced
1 tsp. chopped ginger
1 Tbsp. curry powder
1.5 tsp. allspice
½ t. crushed red pepper
1/2 tsp. salt
1 lb. butternut squash, peeled and chopped into 1 inch pieces
1 lb. sweet potato, peeled and chopped into 1 inch pieces
1 ½ lbs. seitan, cut into 1 inch pieces
3 cups red beans (or 2 cans)
½ cup raisins
1 cup water
1 cup coconut milk
½ cup orange juice
3 Tbsp. lime juice
½ cup chopped green onions
1 cup diced cucumber
1 cup diced tomato
1. Heat olive oil in a large soup pot and sauté onion, garlic, ginger, curry powder, allspice, crushed red pepper and salt for 2-3 minutes.
2. Add butternut squash, sweet potato, seitan, red beans, raisins, water, and coconut milk and simmer 20 minutes.
3. Add orange juice and lime juice and simmer another 15 minutes.
4. Serve over rice and garnish with chopped green onions, diced cucumber and tomato.
